Best Cucumber Salad With Flavour And Crunch

I wanted to create an easy cucumber salad bursting with flavor and fresh herbs as our first summer salad dish. 

This Lemon Dill Cucumber Salad with Feta is perfect for a keto diet and is inspired by one of my favorites, the Greek Salad.

During the summer months, I want nothing more than various fresh salads and to fire up the grill with top-quality cuts of meats and fish.

Let’s face it: not many cucumber recipes aren’t salad-related because it’s the ideal salad ingredient.

Fresh cucumbers are mainly enjoyed by consumers, sliced, pickled, or eaten whole and are also known as cukes.

Our herb garden has been growing so fast that we have an abundance of fresh dill, basil, chives, parsley, and mint.

What I like about this cucumber salad recipe is that you can add whatever you want, such as tomatoes and olives.

Picky Eater Son

Having a child who is a picky eater is tough, and out of every vegetable in the grocery store, he loves seedless cucumbers.

We always try to buy seedless cucumbers at the grocery store each week, so he continues to enjoy them but also so that he sees us eat them.

I’m sure he will gravitate to other types of vegetables as he ages, but for now, we will take what we can from him.

You can find seedless cucumbers at the grocery store or farmer’s market for about $1 in the summer months.

Cucumber is a low-calorie, water-packed vegetable originally from South Asia but grown all over Ontario in greenhouses and gardens during the summer months.

Did you know that cucumbers are a fruit?

Yes, since they have enclosed seeds and develop from a flower, a cucumber is a fruit but is eaten as a vegetable.

Cucumbers are a creeping vine,, meaning they root in the ground and grow as a tomato plant.

The best way to keep your cucumber plants growing steadily is to provide them with a trellis or stick structure to cling to.

Cucumbers are from the gourd family of squash, pumpkin, and watermelon, also known as Cucurbitaceae.

There are three main types of cucumbers that you will find in North America, but almost 100 varieties around the world.

English Cucumbers

The English cucumber is the longest, is narrow, and is often marketed in a plastic wrap.

The skin of English cucumbers is thin and often does not require peeling. In contrast, the garden cucumber has a dark waxy skin.

The skin is normally removed by consumers because of its bitter taste.

Persian Cucumbers

Persian cucumbers are called burpless because they tend to be smaller, sweeter, and seedless.

The skin is smoother, thinner, and, similar to the English variety, does not require peeling.

These cucumbers tend to be milder and easier on the digestive system. Kirby cucumbers are the smallest.

Mini Cucumbers

These mini cucumbers are becoming popular in the marketplace due to consumer preferences.

They have a wide variety of skin colors ranging from yellow to dark green.

Lemon Cucumbers

Lemon cucumbers are round and yellow, resembling lemons, but they are sweet, have thin skins, and contain seeds.

What Is Feta Cheese?

It is a crumbly aged cheese, commonly produced in blocks, and has a slightly grainy texture. Feta is used as a table cheese, as well as in salads and pastries.

Ingredients

  • 1 large seedless cucumber
  • 1/4 cup red onion
  • 1 cup crumbled Greek Feta Cheese
  • 1/4 cup extra virgin Olive oil
  • 1 teaspoon Pink Himalayan Salt
  • 1 fresh lemon juiced
  • 2 cloves of fresh minced garlic
  • 1/4 cup fresh or dry dill
  • 1 tablespoon oregano

Instructions

  1. On your cutting board, slice your washed seedless cucumber into 1/2 inch slices or however small or large you like.
  2. Put the sliced cucumbers in a large serving bowl.
  3. If your feta doesn’t come crumbled, break it up with your fingers in a bowl and add it to the cucumbers.
  4. Add your freshly squeezed lemon, oregano, dill, salt, and extra virgin olive oil in a jar and shake until combined for a minute.
