When it comes to Pizza I think Italian and the word pizza go hand in hand and rarely will anyone disagree.
This is why I decided on delicious toppings such as ricotta cheese, pepperoni, Genoa salami, mozzarella, pizza sauce on an awesome keto fathead pizza crust.
Part of the Keto lifestyle means cutting the carbs, getting rid of the gluten and doing away with the sugar which sounds boring but it really has been fun creating delicious meals.

After cauliflower crust we made our way into the world of fathead dough which enabled us to create keto soft pretzels and gourmet keto bagels both a big hit in our house.
Our son loves fathead dough which is a win for parents with a picky eater and equally important for our meal prep.
The thought of creating a cream cheese pizza crust may seem odd to you if this the first time you’ve heard of fathead pizza but let me tell you it’s one of the best I’ve made for us.

Some people are a huge fan of the keto cauliflower crust but if I was in the mood for pizza I’d go for the fathead pizza by a landslide only because it’s crispy and easier to hold.

I had a fan ask me what the difference was between traditional flour and almond flour and the answer is, gluten.
All-purpose flour is made from wheat grains after removing the cover and the other is fine ground almonds so nuts.
Fathead pizza dough is an almond flour pizza base with other ingredients that help it to rise into the beautiful pizza you see in the photo above.
Fathead pizza dough is one of the easiest gluten-free pizza dough recipes you can make only because you don’t have to knead it to death.
You also don’t have to squeeze water out of any vegetable which saves time for those of you who want a keto pizza now and not tomorrow.
Secrets of my Fathead Pizza Ingredients
You’ll find fathead pizza crust recipes all over the web and I’ll be honest I didn’t invent it I’ve just improved it by making it so many times.
In my Italian fathead pizza crust you will find;
- Almond Flour– We use this >>> Amazon
- Egg
- Parmesan cheese
- Grated pizza mozzarella *the good one Saputo, Salerno only for this house
- Cream Cheese (I used Garlic and Fine Herbs Bousin for this Italian Fathead Pizza)
- Fresh Garlic
- Baking Powder– We use this <<< Amazon
- Other spices (you can add whichever spices you fancy but for the Italian Fathead Pizza I added fresh organic garlic, dehydrated onion flakes, parsley, cayenne pepper, basil, oregano and Rosemary.
- Toppings- Pepperoni, Salami, Ricotta Cheese, Hard-boiled egg slices, Sugar-free Pizza Sauce, Pizza Mozzarella
As you can see my Italian Fathead Pizza crust recipe really only has 4 ingredients and the others are optional which makes this dough favourable for those who want to create personal flavours.
One little tip for flavour when baking your fathead pizza crust is to number one use a pizza stone and number two a thin layer of bacon grease. It’s the good fats you want in your keto diet so you might as well add a bit of flavour to your Italian fathead pizza crust underneath as you will on top.
We also make our own sugar-free pizza sauce or you can buy it at the grocery store or online if making it is not something you’re interested in doing. Simply use diced tomatoes, salt, pepper and a bit of tomato paste with basil and oregano. Cook for 10 minutes on medium-high. Done.
How to make Keto Italian Fathead Pizza
Generally, this amount of ingredients will make enough pizza for 2-3 people if you add a side dish such as a Caesar salad.
- 3/4 cup Almond Flour
- 1 oz Cream Cheese softened
- 1 large egg
- 1 cup grated pizza mozzarella cheese
- 2 tablespoons Parmigiano Reggiano cheese
- 1 clove of minced fresh garlic
- 1 tbsp baking powder
- 1 tsp cayenne pepper
- 1 tsp dried Rosemary
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tbsp onion flakes
- Toppings:
- 4 mini scoops ricotta cheese
- 1/2 cup grated mozzarella cheese
- 4 slices Italian genoa salami
- 10-15 pepperoni slices
- 3 tablespoons pizza sauce
- 2 hard-boiled eggs sliced
- Add all of the ingredients to a mixing bowl or stand mixer and mix to combine
- Knead it a few times and form into a ball
- Add 1 teaspoon bacon fat to your large pizza stone and coat it
- Set fathead pizza dough on the stone and with your fingers press it out into a thin circle
- Bake at 450 for 10 minutes or until golden brown.
- Remove from oven
- Add sugar-free pizza sauce of choice
- /2 cup grated mozzarella cheese
- or 5 mini scoops of fresh ricotta cheese
- Hard-boiled egg slices
- pepperoni slices
- slices Genoa salami
- Bake at 450 degrees 10 minutes or until golden brown, melted and pepperoni is cooked
Finally, just remember you can add toppings you desire as it’s the fathead crust you’re looking for.

Ingredients
