West African Peanut Soup is a full-bodied keto soup that is also vegetarian, inexpensive and perfect for a weeknight meal.

As a self-proclaimed soup nerd I was intrigued when Canadian Budget Binder fan Mary Davies posted that she had West African Peanut Soup for dinner.

I know that you’re probably thinking soup with peanuts, greens, herbs and spices might not jive together but trust me on this one.

This West African Peanut Soup recipe was ready in 30 minutes which is a huge success for anyone after a hard day at work.

You could easily make this West African Peanut Soup in your crock-pot or insta-pot as well so definitely something to keep in mind.

The best part was that I had all of the African Peanut Soup ingredients in the panty and refrigerator apart from fresh ginger.

Days earlier while at Costco I bought a tub of organic kale thinking I would make something delicious or add it to our meal plan.

Any time I can make a pot of soup with keto pantry essentials that’s a good meal because I don’t have to go far to create something filling.

After stopping by the grocery store on Friday night to pick up some fresh ginger I was ready to make Keto African Peanut Soup.

Don’t worry I had no idea either.

In this particular West African Peanut Soup recipe you have very few ingredients but all of them pack a flavourful punch.

Keep in mind you can add or take-away any of the ingredients based on personal preference. If you want to cut down further on the net carbs knock back some of the peanut butter, onion and garlic.

  • Natural Peanut Butter (We use Kraft All Natural Peanut Butter)
  • Fresh Ginger
  • Fresh Garlic Gloves (I used organic garlic)
  • Low-Sodium Vegetable Broth (We use Everyday 365 Broth You can use Chicken or Beef bone broth as well)
  • Tomato Paste  (We use Everyday 365 Tomato Paste Double Concentrate I added some chopped Sun-dried tomatoes)
  • Onion (Original recipe calls for red onion I used white and some spring onion greens only)
  • Organic Baby Kale (or other greens) I used a 320 gram tub of organic Kale from Costco
  • Pink Himalayan Salt (add as needed)
  • Fresh ground black pepper (as needed)
  • Hot Sauce (optional I used some Frank’s Red Hot Sauce)

How to make West African Peanut Soup

West African Peanut Soup is packed full of flavour using everyday pantry and refrigerator ingredients. Not only is is easy to make it’s easy on the wallet and you’ll have it done in no time flat for a delicious weeknight meal.
Ingredients
  • 3/4 cup Natural Peanut Butter (crushed peanuts in the food processor or you can buy it pre-made)
  • 2 tbsps Fresh Ginger minced
  • 3 Fresh Garlic Gloves minced (I used organic garlic)
  • 6 cups Low-Sodium Vegetable Broth (You can use Chicken or Beef bone broth as well)
  • 1 cup cold water
  • 1/2 cup Tomato Paste (I didn’t have enough so I added some chopped Sun-dried tomatoes)
  • 1 Small Onion minced (calls for red onion I used white and some spring onion greens only)
  • Organic Baby Kale (or other greens) I used a 320 gram tub of organic Kale from Costco
  • Pink Himalayan Salt (add as needed)
  • Fresh ground black pepper (as needed)
  • Hot Sauce (optional I used some Frank’s Red Hot Sauce)
Instructions
  1. In a large stock pot add your water and vegetable broth.
  2. Add in onions, salt, pepper, garlic and ginger, (hot sauce)
  3. In a bowl mix your natural peanut butter and tomato paste together then add it to the pot and stir.
  4. Bring to a boil then add your Kale or other greens.
  5. Bring to a boil then let simmer 15 minutes

If you’re not into the Keto lifestyle feel free to jazz the West African Peanut Soup up with some chick peas , sweet potatoes or Yams.

You can also add cooked rice, zoodles (zucchini noodles) (keto), Nu Pasta (keto) or baked spaghetti squash (keto) on the side.

Nutritional Estimate- 61.4 net carbs for the entire recipe or 4.09 net carbs per 1 cup bowl with approximately 15 bowls per pot.

We served our West African Peanut Soup with a side of Grilled Italian Sausages (Gluten-Free) to round out the meal.

If we had some of our famous Keto Bread we would have buttered that up for dipping but sadly, we didn’t.
