Pizza Keto Mozzarella Roll-Ups
My wife always wanted to steal pizza toppings from our pizza, so we devised a keto recipe for her.
Essentially, you have a mozzarella base, and you get to add anything you want to the centre, like a pizza.

The cheese has a few carbs, but that’s about it, making these perfect for those who opt for no-carb cleansing days.
If you add extras as I did for my Keto Mozzarella Pizza Roll-Ups, then the carb count will change.
These cheese roll-ups can be stuffed with anything you like if they fit your macros.
How many of you like to rip the entire topping off your pizza slice and devour it?
I do because it tastes so good, and it’s addicting.

I don’t always do that, and yes, I eat the pizza crust, but for Mrs. CBB, if you left her alone with a piping hot meat-lovers pizza, you’d return to it undressed.

How To Make Fried Mozzarella Cheese
Have you ever wanted to know how to make fried cheese, specifically friend mozzarella, to enjoy as a low-carb snack that you can roll and dip?
Well, I’ve got you covered with my new fried mozzarella roll-ups stuffed with bacon, or sometimes we like to sneak in a grilled hotdog or sausage to switch it up.
The benefit of going the fried mozzarella route is that you don’t have to freeze it before you coat it with a crushed pork-rind mixture or dip it in egg wash.
You don’t have to wrap your frozen mozzarella sticks in bacon as we did for our bacon bombs.
Those keto recipes take longer to prepare because you have that freezing time, which I recommend overnight.
What happens when you get that craving for fried mozzarella cheese or Halloumi and want it now and not tomorrow?

Not Just For Keto Diet Followers
I don’t specifically eat a keto diet, but my wife is in year three of loving low-carb, sugar-free, gluten-free foods, and of course, I don’t mind helping to create recipes for her.
There hasn’t been one keto recipe that we’ve made that I don’t like, but as most of you know, you’re either keto or you’re not.
Pick one or the other, which means I have to watch still what I’m eating because I’m not strict on keto.
This could result in weight gain and other problems you don’t want to deal with.
On occasion, though, like any other snack, enjoying it in moderation is the spice of life.
You must enjoy variety in your meals, so why not pursue deliciousness and gooey fried mozzarella cheese for your next keto snack?

I’ve often wondered how easy it would be to make fried mozzarella cheese taco shells, and we did it super easy.
From there, fried mozzarella became the shell of life for my wife.
Instead of using bread, taco shells, or anything with gluten when she wants a quick fix, she goes with the fried mozzarella, specifically the stuffed roll-ups.
A typical low-carb, high-fat meal for her might be two mozzarella bacon stuffed roll-ups, one hard-boiled egg cut in half, some sugar-free low-carb mayo or dip, and possibly a small green salad.
That’s a meal for her, and I don’t know about you, but it not only smells and looks delicious it tastes out of this world.
Bacon, Cheese, Bacon, Cheese, you can’t go wrong with those two ingredients.
Tips For Making Fried Mozzarella Roll-Ups

There are a few key elements to making the perfect fried mozzarella roll-ups because they can easily become melted if you’re not careful.
Using a good non-stick frying pan is ideal, but I’ve made this in a stainless steel frying pan without issue. I’ve done it so many times it’s easy for me.
Perhaps if it is your first time making fried mozzarella go with a non-stick frying pan.
Quality Italian Pizza Mozzarella
You must use good mozzarella cheese for this recipe and nothing that pretends to be mozzarella.
That means go for the Italian mozzarella that will cost you more than those bricks of cheese that taste nothing like authentic mozzarella.
You don’t want the fresh mozzarella for this recipe, as I can’t promise it will turn out the same way.
For these fried mozzarella roll-ups, we went with the well-known Saputo Pizza Mozzarella cheese or the traditional Saputo mozzarella cheese.
You can find them in huge blocks at Costco for $20, a reasonable price considering how much you get.

How To Fry Mozzarella
If you’re on a keto diet, you know cheese is your friend, so this is a great buy and a must-have staple for the low-carb diet.
When frying the mozzarella strips, you must do it slowly on low heat.
Keep your dial around 4 or 5 to let the mozzarella cheese melt slowly.
Once the cheese is melted and starts to bubble, you come in with your spatula and start going around the edges, lifting them a bit as you go.
The idea is to keep the mozzarella cheese from sticking to the pan and into a rectangular shape for rolling.
Unfortunately, I forgot to take that photo, but once I make this again, I will return it to this post to visually represent what I’m talking about.

Golden Brown Melted Mozzarella Cheese
Once you can easily lift one half of the fried mozzarella rectangle and see it is golden brown, flip the entire lot over in the frying pan.
From here, you will slowly melt the flip side the same way.
Once it has completely melted and browned, shut the heat off.
Let your fried mozzarella cheese rectangle cool enough to stuff it with whatever you like.
In my photos today, you will see fried crispy bacon and a fried Costco hotdog.
Add what you’d like to the middle of your fried mozzarella cheese, then roll it up.

It’s that easy!!!
I’m a massive fan of having a dip with my fried mozzarella roll-ups and tend to go with mayonnaise that has Frank’s Red Hot Sauce mixed in for some tang or taco-seasoned sour cream.

You can also use sugar-free ketchup and some mustard if you roll a hotdog or sausage.

If you’re a pizza lover, add a thin layer of your favorite pizza sauce and other toppings but don’t go overboard because it may get tough to roll a monster fried mozzarella pizza roll.
For ease of cooking the mozzarella cheese rolls, you should melt 1 to 2 tablespoons of butter or bacon fat first and then lay your mozzarella on top.
You can also opt to make them without the extra fat.

- Let the cheese melt completely, and then with your spatula, start forming your rectangle by pushing the cheese back into shape.
- At the same time, see if you can lift the cheese successfully while it holds its shape. Once you can do this for the entire rectangle, quickly flip and melt the other side.
- You will want both sides to be golden brown, but often, the second flipside stays lighter since you don’t want to burn it. This is the side you will want to stuff.
- Turn off the heat once it is done, and let the fried mozzarella cheese cool for 3-5 minutes to handle.
- On top of the fried mozzarella cheese, add your toppings. In this case, crispy fried bacon and hotdogs were used.
- Roll it up and enjoy it!

Have you ever frozen just the browned cheese or a complete rollup? Im trying to figure out what works to make ahead. Headed to Costco today.
No I did not freeze it. Just a complete rollup.
I also found that it’s important to use a good mozzarella or pizza mozzarella like Salerno. Stay away from Kraft, Black Diamond etc. It’s turns to a greasy mess.
Can you melt the mozzarella in the oven on parchment paper and do the same? I’ve done tuna melts with Swiss before
I use the spatula quite a bit to keep it formed and from sticking in the pan. I’ve never tried the oven before. I guess it doesn’t hurt to try. I’ll still eat it whatever it turns out to look like.

I may have missed something but I’m not sure how to do the strips of cheese. I get that it’s 10 1/4 inch long but you say to put 5 slices next to each other. Also, how thick are the slices. It looks much thicker than standard slices. I’m in Ecuador so I can’t get those specific brands. We do have an excellent cheese factory that has the most lovely cows. They are each named and pampered. It’s fabulous cheese! Anyway, just a little more clarification would be greatly appreciated. Thank you so much for your help. I can hardly wait to try this!
Hi Cynthia, I slice the mozzarella cheese from a brick or shred it if it’s easier. There’s no method to the cheese madness apart from keeping it in a circle, butter the pan, and cook slow so it doesn’t burn. The more you do it the easier it gets. I’d say the cheese is about the same size as a Keaft cheese slice. Also, depending on the size of your frying pan the mozzarella cheese rolls will be thinner or thicker. Let me know how it goes.
