A Frugal Keto Thanksgiving Meal Plan With Fix-in’s And Desserts

This year we will be having our first keto Thanksgiving dinner at our house as a family. 

We’ve had a rough two years as a family from death to major health declines and have so much to be thankful for.

For Thanksgiving this year we are blessed to be together as a family even if it is only the three of us.

We can only hold the memories of the past in our hearts and move forward to create new ones.

In the past, we would go to my wife’s parents house for a huge Thanksgiving gathering but sadly those days have come and gone. 

Now, it’s our turn to start Thanksgiving traditions in our house as a family of 3 which we are excited about.

Our First Keto Thanksgiving

As you all know Mrs. CBB has been eating a keto lifestyle for 3 years now and I decided to join her this year to understand it better.

I wanted to know what keto was like and what the food really tasted like.

Boy, it was a game-changer for me because the foods I used to stay away from I now enjoy and we’re both shedding pounds.

In fact, Mrs CBB has lost over 100lbs since she started the Keto diet and has never looked back.

Even our doctor is amazed and can’t believe how healthy she is and her cholesterol reading is perfect.

Below I will share with you all of our Thanksgiving Keto Recipes so if you’re still undecided as to what to make maybe we’ll inspire you.

It took some meal planning because we wanted to make sure that we were choosing keto recipes that were fit for a keto Thanksgiving feast.

I didn’t go into detail for drinks since we often have tea, coffee and water but on occasion make a lovely batch of keto lemonade.

Keto Thanksgiving Stuffing Recipe

Although we would have loved to cook a massive turkey for our Keto Thanksgiving meal we opted to go with chicken instead.

We bought a large chicken from Costco and plan to stuff it with a savoury Keto Thanksgiving Stuffing using our keto bread recipe.

The idea is to dry out the bread which is fairly easy to do and then proceed to make stuffing like you normally would.

I will run you through how to make Keto Thanksgiving stuffing for your turkey or chicken.

  • 1 loaf of keto bread left out for a day so it becomes stale
  • 1 cup of nut such as pecans, walnuts, macadamia nuts chopped up. These are the best keto nuts to eat.
  • 1 medium white onion diced
  • 4 stalks of celery chopped
  • 1  tablespoon each of Rosemary, Thyme, Oregano and Sage
  • 1/2 cup chopped dried apricots
  • 1/2 cup unsweetened dried raspberries, cranberries or blueberries (optional)
  • 3 large eggs
  • 2 teaspoons salt
  • 3- 4 cups of chicken or turkey bone broth
  • 1 pound ground turkey
  • 1 tablespoon butter

On a baking sheet lined with parchment paper cut your bread into large cubes and toast until golden brown, about 1o minutes at 350 degrees.

Remove from the oven and then add your chopped nuts and toast them for about 10 minutes stirring often. You can do this on the stove-top as well.

Once the bread is cooled put them back in the oven for a further 10 minutes to dry them even further but at 300 degrees. Watch they don’t burn.

In a large frying pan brown your minced turkey or whichever mince you choose with salt until cooked and then drain the fat.

Using the same frying pan as your mince add a bit of butter, minced onions and cook until translucent then add in your celery.

Cook the celery and onions on medium heat for about 3 minutes then add your dried fruits and herbs. Season with salt and pepper.

Once cooked transfer to the same bowl as your cooked turkey mince and then add your dried bread, eggs, nuts and 1/2 teaspoon of salt.

Make sure to coat everything generously.

Transfer your stuffing to a large baking dish and pour 3-4 cups of bone broth over the top if you like a moist stuffing or 2 cups if you like it dry.

Cover with tin-foil and bake at 350 degrees for 40 minutes.

Remove tin-foil and bake for a further 15 minutes so the top gets golden in colour.

Making Keto Turkey Stuffing is fairly easy and you can add or take away any of the nuts and dried fruit ingredients as you like as it’s a versatile recipe.
Ingredients

The keto thanksgiving stuffing will add higher carb counts with the dried fruits and nuts so enjoy this dish in portions.

If you prefer not to add any nuts or dried fruits that are perfectly fine as well since this recipe is versatile.

So far we are having;

  • Whole Roast Chicken with butter, sage, rosemary, salt and pepper on top
  • Keto Thanksgiving Stuffing
  • Homemade Keto Gravy (using chicken juices, xanthan gum, chicken bone broth, butter)

Keto Thanksgiving Side-Dishes

Our side-dishes are mainly going to be keto recipes that we’ve already created and love.

I  know it seems like quite a bit for the three of us but the plan is to have left-overs so we don’t have to cook this week.

The good thing about side-dishes is that you only have to add a protein in most cases to make it a meal.

This is the fun part of our keto Thanksgiving dinner menu, the dessert table.

We didn’t have to give this much thought because we don’t often eat dessert so we already knew what we wanted.

When we create keto recipes for this blog they are the recipes we REALLY want to try.

So, for our Keto Thanksgiving desserts menu, we are going with a few options only because we will have guests coming over.

We won’t be telling them that they are keto and I bet they won’t even know the difference. Ha!

I will also whip up a batch of keto vanilla ice-cream to add on the side if anyone wants a scoop on their dessert.

There will also be tea and coffee available for our guests when they come around for dessert.

Being Thankful

Our lives have been filled with so much love and devastation the past two years that we embrace every minute of every day.

We’ve come to realize just how important our loved ones are and why creating memories is a top priority for us.

When someone is gone, they are gone and that’s all you’re left with, memories.

So make them last, make them laugh and make them always.

Frugal Recipe Find

no bake pumpkin pie

There was something about this No-Bake Pumpkin Pie that caught my attention on Pinterest.

I wanted to find a recipe that wasn’t keto as I know not all of my followers eat a keto diet.

Besides being a no-bake recipe which is great for people who don’t like to bake but the layers of whipped cream look so good.

Any time you add vanilla ice-cream or whipped cream to pumpkin recipes I find it makes the flavour pop.

Home and Blog Update

Blog Update

There’s not much to report on the blog this week apart from we had a good month in September for blog income which was nice.

I’m hoping to continue increasing that amount so we have an ongoing income right into our retirement years.

Soon you will start to see videos on the blog related to posts and recipes that I’ve created. Nothing fancy as I’m not one of those guys who will do anything on camera. haha.

Other than that, a busy blog week plus the Globe and Mail picked up my article about parents who hoard and kids who have to pick up the pieces when they are gone.

Home Update

I’m almost done renovating the bathroom which has taken me almost all of the summer to complete.

I know it seems like a long time but with a child who wants your attention all the time and other family duties, that’s what happens.

Both of us are happy with what the bathroom looks now and all we have left to do is buy the shower curtain, towel bar and toilet paper holder.

I managed to buy 3 lights on sale at Lowes last week for 50% off which was a great deal and they look fabulous.

Our herbs are in for the season and the parsley has come back in full force which means I’ll be giving it a haircut.

I’ve actually used quite a bit of my pureed parsley in olive oil and garlic for cooking and it tastes delicious.

I put the Rosemary in our upper-level bedroom in the window in hopes of keeping it alive over the winter.

No promises, haha.

  1. Everything sounds so good it’s making me hungry! I used to LOVE stuffing as part of turkey dinner but haven’t had it in the 2.5 years since I went GF. This sounds great!

    I haven’t followed your journey for too long, so I don’t know the back stories, but I’m sorry to hear about your family losses and health issues.

      Thanks for stopping in. Yes the past two years have been rough for us but we are pushing through it.
      The stuffing is going to be amazing, I can’t wait. What will you be making for Thanksgiving? Are you in the USA or Canada?
